These mango shortbread bars are a perfect combination of buttery shortbread crust and fruity mango filling. They are great for parties, potlucks, or just as a sweet snack. The bars are easy to make and will satisfy your sweet tooth cravings.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 2 cups diced mangoes
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch

Directions

  1. Preheat the oven to 350°F and line a 9x9-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust. Bake for 20 minutes or until lightly golden brown.
  4. In a saucepan, combine the diced mangoes, granulated sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens, stirring constantly.
  5. Pour the mango filling over the baked crust and spread it evenly. Return the dish to the oven and bake for another 20-25 minutes.
