Malooba is a traditional Middle Eastern dish made with layers of vegetables, rice, and meat, all cooked together in a flavorful broth. This comforting and hearty meal is perfect for a cozy family dinner or gathering with friends.

Ingredients

  • 2 cups basmati rice
  • 1 lb chicken thighs, bone-in and skin-on
  • 2 large carrots, peeled and sliced
  • 2 medium potatoes, peeled and sliced
  • 1 large onion, sliced
  • 1 cup frozen peas
  • 4 cups chicken or vegetable broth
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 1/4 cup olive oil

Directions

  1. Preheat the oven to 350°F.
  2. In a large Dutch oven, heat olive oil over medium heat.
  3. Season the chicken thighs with cumin, coriander, turmeric, salt, and pepper. Brown the chicken on both sides, then remove and set aside.
  4. Add sliced onions to the Dutch oven and cook until translucent. Add carrots and potatoes, cooking for 5 minutes.
  5. Layer the chicken thighs on top of the vegetables, then cover with basmati rice.
  6. Pour chicken or vegetable broth over the rice and vegetables. Cover with a lid and bake in the preheated oven for 45 minutes.
  7. Remove the lid, sprinkle frozen peas over the top, and bake for an additional 15 minutes until the rice is fully cooked.
  8. Carefully invert the Dutch oven onto a large serving platter, allowing the Malooba to come out in a beautiful layered presentation.
