Ingredients
- 2 lbs boneless chicken, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 green chilies, sliced
- 2 tablespoons Maharaja curry powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 cup tomato puree
- 1 cup coconut milk
- 1 cup water
- Salt to taste
- Fresh cilantro, for garnish
Directions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic, grated ginger, and sliced green chilies. Cook for another 2 minutes.
- Add the chicken cubes and cook until they are lightly browned.
- Add the Maharaja curry powder, turmeric powder, cumin powder, coriander powder, and garam masala. Mix well to coat the chicken with the spices.
- Pour in the tomato puree, coconut milk, and water. Stir to combine.
- Season with salt according to your taste.
- Cover the pot and let the curry simmer over low heat for about 40 minutes or until the chicken is cooked through and tender.
