Delicious Lemon Bar Peeps Recipe

Ingredients

• 1 cup all-purpose flour
• 1/2 cup powdered sugar
• 1/2 cup unsalted butter, softened
• 2 large eggs
• 1 cup granulated sugar
• 2 tablespoons all-purpose flour
• 1/4 cup fresh lemon juice
• Zest of one lemon
• Yellow Peeps marshmallows

Directions

1. Preheat the oven to 350°F and grease a 9x9 inch baking dish
2. In a mixing bowl, combine 1 cup of flour, powdered sugar, and softened butter to form a dough
3. Press the dough into the bottom of the baking dish and bake for 15-20 minutes until lightly golden
4. In another bowl, whisk together eggs, granulated sugar, 2 tablespoons of flour, lemon juice, and lemon zest
5. Pour the lemon mixture over the baked crust and return to the oven for 20-25 minutes until set
6. Let the lemon bars cool completely before cutting into squares
7. Place a yellow Peeps marshmallow on top of each lemon bar square
