Ingredients
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 cup fresh lemon juice
- Zest of one lemon
- Yellow Peeps marshmallows
Directions
- Preheat the oven to 350°F and grease a 9x9 inch baking dish
- In a mixing bowl, combine 1 cup of flour, powdered sugar, and softened butter to form a dough
- Press the dough into the bottom of the baking dish and bake for 15-20 minutes until lightly golden
- In another bowl, whisk together eggs, granulated sugar, 2 tablespoons of flour, lemon juice, and lemon zest
- Pour the lemon mixture over the baked crust and return to the oven for 20-25 minutes until set
- Let the lemon bars cool completely before cutting into squares
- Place a yellow Peeps marshmallow on top of each lemon bar square
- Broil the bars for 1-2 minutes until the Peeps are lightly toasted
