Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon nutmeg
  • 3 large eggs, beaten

Directions

  1. In a large mixing bowl, combine the flour, salt, and dried oregano. Add the chilled butter cubes and rub it into the flour mixture until it resembles coarse crumbs.
  2. Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a ball, cover it with plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent and fragrant.
  5. Add the thawed and drained spinach to the skillet and cook for a few minutes, until any excess moisture evaporates.
  6. Remove the skillet from the heat and let the spinach mixture cool for a few minutes.

  11. Pour the remaining cheese mixture over the spinach layer.
