Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 can tomato sauce
- 4 cups beef broth
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Directions
- Set Instant Pot to sauté mode and cook ground beef until browned. Add diced onion and garlic, and cook until softened.
- Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, pepper, and broken lasagna noodles.
- Close the lid and set Instant Pot to manual high pressure for 5 minutes. Once done, quick release the pressure.
- Stir in shredded mozzarella and grated Parmesan cheese until melted and well combined.
- Serve hot soup in bowls and garnish with fresh basil before serving.
