Ingredients

  • 6 large yellow bell peppers
  • 1 lb ground beef
  • 1/2 cup uncooked long-grain rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup grated cheese (cheddar or mozzarella)

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the yellow bell peppers and remove the seeds and membranes. Set aside.
  3. In a large bowl, combine the ground beef, rice, onion, garlic, tomato paste, paprika, thyme, oregano, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  4. Stuff each yellow pepper with the ground beef mixture, pressing it firmly to fill the peppers completely.
  5. Arrange the stuffed peppers in a baking dish and pour beef broth into the bottom of the dish. This will help keep the peppers moist during baking.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
  7. After 40 minutes, remove the foil and sprinkle the grated cheese over the stuffed peppers.
  8. Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.
  9. Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
  10. Serve the Hungarian stuffed yellow peppers hot, garnished with fresh herbs if desired.
