Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 1/2 cups fresh strawberries, sliced
  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1/2 cup strawberry jam
  • 1 cup powdered sugar, for glaze
  • 2 tablespoons strawberry puree
  • 2-3 whole strawberries, for garnish

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  9. In the meantime, prepare the whipped cream filling by beating the chilled heavy cream and powdered sugar together until stiff peaks form.
  10. Place one cake layer on a serving platter. Spread a layer of strawberry jam over the top. Arrange the sliced strawberries on top of the jam.
  11. Spread a thick layer of whipped cream over the strawberries. Place the second cake layer on top.
  12. In a small bowl, whisk together 1 cup of powdered sugar and strawberry puree to make the glaze. Drizzle the glaze over the top of the cake, allowing it to drip down the sides.
  13. Place the whole strawberries on top of the cake for decoration.
  14. Refrigerate the cake for at least 1 hour before serving to allow the flavors to blend.
  15. Slice and serve this strawberry sweetheart cake to your loved ones and watch their hearts melt with delight.
