Ingredients

  • 6 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, brown the ground beef with the onion and garlic. Drain any excess fat.
  4. Stir in the cooked rice, diced tomatoes, 1/2 cup of cheese, paprika, cayenne pepper, salt, and pepper.
  5. Fill each bell pepper with the meat mixture and place in a baking dish.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil, sprinkle the remaining cheese on top of the peppers, and bake for an additional 15 minutes until the cheese is melted and bubbly.
