Ingredients

  • For the crust:
  • - 1 1/2 cups all-purpose flour
  • - 1/2 cup unsalted butter, cold and cut into small pieces

  • - 1 egg yolk
  • - 1 tablespoon ice water
  • For the custard filling:
  • - 2 cups milk
  • - 1/2 cup granulated sugar
  • - 1/4 cup cornstarch
  • - 4 egg yolks
  • - 2 teaspoons vanilla extract
  • - Assorted fresh fruits (strawberries, blueberries, kiwi, etc.)
  • - 1/4 cup apricot jam, melted (optional, for glaze)

Directions

  1. In a food processor, combine the flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg yolk and ice water. Slowly add the egg mixture to the food processor while pulsing, until the dough starts to come together.
  3. Turn the dough out onto a floured surface and knead it gently a few times to bring it together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
