Ingredients
- 2 cans (28 ounces each) fire roasted crushed tomatoes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 cup vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Directions
- In a large pot, heat olive oil over medium heat.
- Add chopped onions and minced garlic to the pot. Sauté until onions are translucent and garlic is fragrant.
- Add the fire roasted crushed tomatoes, vegetable broth, dried oregano, dried basil, and dried thyme to the pot. Stir well to combine.
- Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes to allow the flavors to meld together.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
