It's perfect for a quick and easy lunch or served alongside a grilled cheese sandwich for a satisfying dinner.

Ingredients

  • 2 cans (28 ounces each) fire roasted crushed tomatoes
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and minced garlic to the pot. Sauté until onions are translucent and garlic is fragrant.
  3. Add the fire roasted crushed tomatoes, vegetable broth, dried oregano, dried basil, and dried thyme to the pot. Stir well to combine.
  4. Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes to allow the flavors to meld together.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches until smooth.
  6. Stir in the heavy cream and season with salt and pepper to taste.
  7. Simmer the soup for an additional 5 minutes to heat through.
  8. Serve the fire roasted tomato soup hot, garnished with fresh basil leaves.
