Ingredients

  • 1 duck (approximately 5 lbs)
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 onion, finely chopped
  • 4 cloves garlic, minced

  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Fresh parsley for garnish

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Season the duck inside and out with salt, black pepper, and 1 teaspoon of paprika.
  3. Place the duck on a rack in a roasting pan and roast for 2 hours or until the skin is golden and crispy.
  4. While the duck is roasting, rinse the rice under cold water until the water runs clear. Drain well.
  5. In a large saucepan, heat the olive oil and butter over medium heat.
  6. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
  7. Stir in the turmeric, cumin, cinnamon, cayenne pepper, and remaining paprika. Cook for an additional minute to toast the spices.
  8. Add the rinsed rice to the saucepan and stir to coat the grains with the aromatic spices.
  9. Pour in the chicken broth and bring to a boil.
  10. Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes or until the rice is tender and has absorbed the liquid.
  11. Remove the duck from the oven and let it rest for a few minutes before carving.
  12. Serve the duck alongside the fragrant yellow rice.
