Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) garbanzo beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup whole wheat pasta, uncooked
  • Fresh parsley, for garnish

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic to the pot and sauté until onion is translucent and garlic is fragrant.
  3. Next, add the diced tomatoes, garbanzo beans, vegetable broth, dried basil, dried oregano, salt, and black pepper to the pot. Stir well to combine.
