Ingredients
- 1 cup leftover turkey, shredded
- 1 cup leftover stuffing, crumbled
- 1/2 cup leftover cranberry sauce
- 1 cup leftover mashed potatoes
- 1/4 cup all-purpose flour
- 2 eggs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1/2 cup mashed potatoes, for frosting
- 4 slices cooked turkey bacon, for garnish
Directions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
- In a large mixing bowl, combine the shredded turkey, crumbled stuffing, cranberry sauce, mashed potatoes, flour, eggs, milk, Parmesan cheese, baking powder, salt, and black pepper. Mix well until all the ingredients are fully combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- While the cupcakes are baking, prepare the mashed potato frosting. In a small bowl, mix together the mashed potatoes and vegetable oil until smooth and creamy. Set aside.
- Once the cupcakes are baked and cooled, frost each cupcake with the mashed potato frosting.
- Garnish each cupcake with a slice of cooked turkey bacon.
