This recipe takes your traditional Thanksgiving turkey to the next level with a citrus and honey brine. The turkey is then smoked to perfection, resulting in a tender and juicy main dish that is sure to impress your guests.

Ingredients

  • 12-14 lb turkey
  • 2 cups honey
  • 1 cup kosher salt
  • 4 oranges, quartered
  • 2 lemons, quartered
  • 1 bunch fresh thyme
  • 1 head garlic, peeled and smashed
  • 1 gallon water
  • 1 cup wood chips for smoking

Directions

  1. In a large pot, combine water, honey, kosher salt, oranges, lemons, thyme, and garlic. Bring to a boil, stirring until salt and honey are dissolved. Remove from heat and let cool to room temperature.
  2. Place the turkey in a large brining bag or container and pour the brine over the turkey. Seal and refrigerate for 24 hours.
  3. Preheat your smoker to 225°F. Remove the turkey from the brine and pat dry with paper towels.
  4. Place the turkey on the smoker and smoke for 30 minutes per pound, or until the internal temperature reaches 165°F in the thickest part of the breast.
  5. Let the turkey rest for 20 minutes before carving and serving.
