Ingredients
- 12-14 lb turkey
- 2 cups honey
- 1 cup kosher salt
- 4 oranges, quartered
- 2 lemons, quartered
- 1 bunch fresh thyme
- 1 head garlic, peeled and smashed
- 1 gallon water
- 1 cup wood chips for smoking
Directions
- In a large pot, combine water, honey, kosher salt, oranges, lemons, thyme, and garlic. Bring to a boil, stirring until salt and honey are dissolved. Remove from heat and let cool to room temperature.
- Place the turkey in a large brining bag or container and pour the brine over the turkey. Seal and refrigerate for 24 hours.
