Ingredients

  • For the Chocolate Crust:
  • - 1 ½ cups chocolate cookie crumbs

  • - 1 tablespoon lemon juice

  • - 8 ounces cream cheese, softened

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the chocolate cookie crumbs and melted butter. Mix until well combined.
  3. Press the crust mixture into the bottom of a 9-inch (23 cm) springform pan to form an even layer. Bake for 8 minutes, then remove from the oven and let it cool.
  4. In a saucepan, combine the raspberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and the sauce thickens slightly, about 10 minutes. Remove from heat and let it cool.

  9. Spread half of the cream cheese mixture over the cooled crust in the springform pan.
  10. Drizzle half of the raspberry sauce over the cream cheese mixture.
  11. Repeat with another layer of cream cheese mixture and raspberry sauce.
  12. Swirl a knife through the layers to create a marbled effect.
  13. Refrigerate the chocolate raspberry cloud for at least 4 hours, or overnight, until set.
  14. Once set, remove the sides of the springform pan.
  15. Garnish with fresh raspberries and serve chilled.
