Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups diced apples
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • For the cream cheese icing:
  • 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk

Directions

  1. Preheat your oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the melted butter, buttermilk, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. In a small bowl, toss together the diced apples, brown sugar, and ground cinnamon.
  5. Spoon a small amount of the muffin batter into the bottom of each muffin cup, just enough to cover the bottom.
  6. Divide the apple mixture evenly among the muffin cups, layering it on top of the batter.
  7. Spoon the remaining muffin batter over the apple mixture, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. While the muffins are baking, prepare the cream cheese icing. In a bowl, beat together the cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  10. Once the muffins have cooled slightly, drizzle the cream cheese icing over the tops.
  11. Serve the apple cinnamon roll muffins warm or at room temperature. Enjoy!
