This Chicken Sauerkraut Potato Bake is a hearty and comforting dish that combines the tanginess of sauerkraut with the simplicity of baked chicken and potatoes. Perfect for a cozy family dinner or a casual gathering with friends.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) sauerkraut, drained and rinsed
  • 4 medium potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium-high heat. Season chicken breasts with salt, pepper, and paprika, then brown on both sides, about 4-5 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add onion and garlic and sauté until softened, about 3 minutes.
  4. Add sauerkraut and chicken broth to the skillet, stirring to combine. Cook for 5 minutes, then remove from heat.
  5. In a baking dish, layer sliced potatoes on the bottom. Place chicken breasts on top of the potatoes, then pour the sauerkraut mixture over the chicken.
  6. Pour white wine over the dish, if using. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  7. Remove foil and bake for an additional 15 minutes, or until chicken is cooked through and potatoes are tender.
  8. Serve hot and enjoy!
