Ingredients
- 8 ounces of penne pasta
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons olive oil, divided
- 4 cloves of garlic, minced
- 1 cup of chicken broth
- 1 cup of heavy cream
- 1/2 cup of sundried tomatoes, drained and chopped
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Directions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
