Ingredients

  • 8 ounces of penne pasta
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 tablespoons olive oil, divided
  • 4 cloves of garlic, minced
  • 1 cup of chicken broth
  • 1 cup of heavy cream
  • 1/2 cup of sundried tomatoes, drained and chopped
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Directions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Cook until fragrant, about 1 minute.
  4. Add the chicken broth to the skillet and bring to a simmer. Cook for 2-3 minutes to reduce slightly.
  5. Stir in the heavy cream and sundried tomatoes. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. Add the cooked penne pasta and cooked chicken to the skillet. Toss to coat the pasta and chicken with the sauce. Cook for an additional 2-3 minutes until heated through.
  7. Remove from heat and stir in the Parmesan cheese.
  8. Serve the pasta in bowls or plates. Garnish with fresh basil leaves.
