Ingredients
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda

- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup pumpkin puree
- 1 teaspoon lemon juice
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 6 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- Additional powdered sugar, for dusting
Directions
- Preheat your oven to 375°F (190°C). Grease a 10x15-inch jelly roll pan and line it with parchment paper.
- In a small bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, beat the eggs and granulated sugar until thick and pale yellow in color. Add the pumpkin puree and lemon juice, and mix until well combined.

- Starting at one of the short ends, roll the cake up in the towel, jelly roll style. Allow it to cool completely in the towel.
- In a medium bowl, beat together the cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy.
- Unroll the cooled cake and spread the cream cheese mixture evenly over the surface.
- Gently roll the cake back up, without the towel this time. Place it on a serving platter.
- Refrigerate for at least 1 hour before serving. Dust with additional powdered sugar before slicing and serving.
