Ingredients

  • 1 lb cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 sheets puff pastry, thawed

Directions

  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded chicken, cheddar cheese, diced onion, diced bell pepper, mayonnaise, garlic powder, salt, and black pepper. Mix well to combine.
  3. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 6 squares.
  4. Spoon the chicken mixture onto the center of each square. Fold the pastry over the filling to create a triangle shape. Use a fork to crimp the edges together.
  5. Place the pockets on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed up.
