Ingredients
- 1 lb cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 sheets puff pastry, thawed
Directions
- Preheat oven to 400F and line a baking sheet with parchment paper.
- In a large bowl, combine the shredded chicken, cheddar cheese, diced onion, diced bell pepper, mayonnaise, garlic powder, salt, and black pepper. Mix well to combine.
- Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 6 squares.
- Spoon the chicken mixture onto the center of each square. Fold the pastry over the filling to create a triangle shape. Use a fork to crimp the edges together.
- Place the pockets on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed up.
