Ingredients
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 6 slices of bacon, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 8-10 cherry tomatoes
- Wooden or metal skewers
- For the Marinade:
- - 1/4 cup olive oil
- - 1/4 cup soy sauce
- - 2 tablespoons honey
- - 2 tablespoons Dijon mustard
- - 2 cloves garlic, minced
- - 1 teaspoon smoked paprika
- - Salt and black pepper to taste
Directions
- In a bowl, whisk together all the marinade ingredients until well combined.
- Place the chicken cubes in a ziplock bag and pour the marinade over the chicken. Seal the bag and gently massage the chicken to ensure it is evenly coated. Marinate in the refrigerator for at least 1 hour or overnight for best results.
- Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, bacon, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating ingredients.
- Place the skewers on the grill and cook for 5-6 minutes per side, or until the chicken is cooked through and the bacon is crispy.
- Remove from the grill and let the skewers rest for a few minutes. Serve hot and enjoy!
