Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 potatoes, peeled and cubed
  • 1 onion, thinly sliced
  • 2 tomatoes, chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Directions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the sliced onions and sauté until golden brown.
  4. Add the minced garlic and grated ginger, cook for another minute.
  5. Add the turmeric, chili powder, and salt, stir well.
  6. Add the cauliflower florets and potato cubes, mix until coated with the spices.
  7. Cover and cook for 15-20 minutes, stirring occasionally, until the vegetables are tender.
  8. Add the chopped tomatoes and garam masala, cook for another 5 minutes.
  9. Garnish with fresh cilantro and serve hot with rice or flatbread.
