Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups ripe bananas, mashed
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 2 ripe bananas, sliced

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the mashed ripe bananas, eggs, and vanilla extract to the butter-sugar mixture. Mix well.
  5. Gradually add the dry flour mixture to the banana mixture, alternating with buttermilk. Begin and end with the dry ingredients, mixing well after each addition.
  6. Divide the batter equally between the prepared cake pans. Smooth the tops with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. While the cakes are baking, prepare the caramel glaze. In a saucepan, combine the brown sugar, heavy cream, butter, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and caramelizes. Remove from heat.
  9. Once the cakes are done baking, remove them from the oven and let them cool in the pans for 10 minutes. After 10 minutes, transfer the cakes to a wire rack to cool completely.
  10. Place one cake layer on a serving plate. Pour half of the caramel glaze over the cake layer. Spread evenly.
  11. Top with the second cake layer and pour the remaining caramel glaze over the top. Allow the glaze to drip down the sides of the cake.
  12. Arrange the sliced bananas on top of the cake as a garnish.
  13. Slice and serve this decadent Caramelized Banana Cake, and enjoy!
