Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 325°F (165°C).
  2. Season the beef short ribs generously with salt and pepper.
  3. Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.
  4. Working in batches, sear the short ribs on all sides until brown and caramelized. Remove them from the pot and set aside.
  5. In the same pot, add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are softened and fragrant.
  6. Return the seared short ribs to the pot and pour in the beef broth and red wine.
  7. Add the tomato paste, Worcestershire sauce, thyme sprigs, and bay leaves. Stir to combine everything well.
  8. Cover the pot with a lid and transfer it to the preheated oven.
  9. Braise the short ribs for 3 hours, or until the meat is tender and easily pulls apart with a fork.
  10. Once done, remove the pot from the oven. Carefully transfer the short ribs to a serving plate and cover them with foil to keep warm.
  11. Using a ladle, skim off any excess fat from the surface of the sauce.
  12. For a smoother sauce, strain it through a fine mesh sieve, discarding the solids.
  13. Return the strained sauce to the pot and bring it to a simmer over medium heat. Cook until the sauce thickens slightly.
  14. Taste and adjust the seasoning with salt and pepper, if needed.
  15. Serve the braised beef short ribs over creamy mashed potatoes or buttery egg noodles, drizzled with the rich sauce.
  16. Garnish with fresh herbs, if desired, and enjoy this comforting and flavorful dish!
