Ingredients

  • For the Chocolate Cake Layers:

  • 1 teaspoon salt
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the Chocolate Mousse Filling:
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • For the Chocolate Ganache Frosting:
  • 1 and 1/2 cups heavy cream
  • 12 ounces semisweet chocolate, finely chopped
  • For the Chocolate Bunny Decorations:
  • 4 ounces white chocolate melting wafers
  • Black gel food coloring
  • Pink gel food coloring
  • White gel food coloring

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Add the granulated sugar, eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix well until combined.
  4. Stir in the boiling water to the cake batter. The batter will be thin, but that's okay.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. Meanwhile, prepare the chocolate mousse filling. In a mixing bowl, beat the heavy cream, powdered sugar, cocoa powder, and vanilla extract until stiff peaks form.
  9. Once the cakes have cooled, slice each cake in half horizontally to create four cake layers.
  10. Place one cake layer on a serving plate and spread a generous amount of chocolate mousse filling on top.
  11. Repeat this process with the remaining cake layers and mousse, stacking them on top of each other.
  12. To prepare the chocolate ganache frosting, heat the heavy cream in a saucepan over medium heat until it begins to simmer.
  13. Place the chopped semisweet chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2-3 minutes.
  14. Using a whisk, gently stir the mixture until the chocolate is completely melted and the ganache is smooth and glossy.
  15. Let the ganache cool for about 10 minutes, then pour it over the cake, allowing it to drip down the sides.
  16. Refrigerate the cake for 1-2 hours to set the ganache.
  17. While the cake is chilling, prepare the chocolate bunny decorations. Melt the white chocolate melting wafers according to the package instructions.
  18. Divide the melted chocolate into three bowls. Add black gel food coloring to one bowl, pink gel food coloring to another, and leave the third bowl white.
  19. Transfer each colored chocolate to separate piping bags or small ziplock bags. Snip off a small tip from the corner of each bag.
  20. On a parchment paper-lined baking sheet, pipe the outline of bunny ears, eyes, nose, and whiskers using the black chocolate. Fill them in with the pink chocolate.
  21. Allow the chocolate decorations to harden in the refrigerator for 10-15 minutes.
