Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • For the sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Directions

  1. In a small bowl, combine the olive oil, minced garlic, lemon juice, honey, smoked paprika, salt, black pepper, and cayenne pepper (if using). Mix well.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the chicken to ensure it's coated in the marinade. Marinate in the refrigerator for at least 30 minutes, or up to 24 hours for maximum flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F.
  5. While the chicken is grilling, prepare the sauce. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, smoked paprika, salt, and pepper. Adjust the seasoning to taste.
  6. Once the chicken is done cooking, remove it from the grill and let it rest for a few minutes. Serve the grilled chicken with the homemade sauce on the side.
