Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup butter, cold and cubed
  • 1/2 cup ice water
  • 6 cups fresh blackberries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 egg, beaten
  • 1 tbsp milk

Directions

  1. In a large bowl, mix the flour and cold cubed butter until the mixture resembles coarse crumbs.
  2. Slowly add in the ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a large bowl, combine the blackberries, sugar, cornstarch, lemon zest, and lemon juice. Toss to coat the blackberries evenly.
  5. Roll out one of the dough discs on a floured surface to fit a pie dish. Place the dough in the dish and trim any excess dough hanging over the edges.
