Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apple
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat the eggs lightly. Add melted butter, applesauce, and vanilla extract. Stir well to combine.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Be careful not to overmix.
  5. Fold in the chopped apple and walnuts (if using).
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. In a small bowl, prepare the streusel topping by combining 1/4 cup granulated sugar, 1/4 cup all-purpose flour, and 1/2 teaspoon ground cinnamon. Cut in 2 tablespoons of cold butter until the mixture resembles crumbly crumbs. Sprinkle the streusel topping over each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  10. Serve warm or at room temperature. Enjoy!
