- 1 pound chorizo, sliced
- 1 onion, diced

- Salt and pepper to taste
- Fresh parsley, for garnish

- In a large pot, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned. Remove the chorizo from the pot and set aside.
