Ingredients

  • 2 tomatoes
  • 1 poblano pepper
  • 1 jalapeno pepper
  • 1 red bell pepper
  • 1/2 red onion
  • 2 cloves of garlic
  • 1/4 cup fresh cilantro leaves
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Directions

  1. Preheat the broiler on high.
  2. Place the tomatoes, poblano pepper, jalapeno pepper, and red bell pepper on a baking sheet.
  3. Broil for 5-7 minutes, turning occasionally, until the peppers are charred and the tomatoes are softened.
  4. Remove from the broiler and let them cool for a few minutes.
  5. Peel the charred skin off the peppers and remove the stems and seeds. Dice them.
  6. In a blender or food processor, combine the diced peppers, tomatoes, red onion, garlic, cilantro, lime juice, olive oil, smoked paprika, cumin, salt, and pepper.
  7. Blend until the salsa reaches your desired consistency.
  8. Taste and adjust the seasoning as needed.
  9. Transfer the salsa to a bowl and let it chill in the refrigerator for at least 30 minutes before serving.
