Ingredients
- 2 cups all-purpose flour
- 1/2 cup butter, cold and cubed
- 1/2 cup water
- 1 onion, diced
- 2 carrots, diced

- Salt and pepper to taste
Directions
- Preheat oven to 375°F
- In a large bowl, mix flour and butter until crumbly. Slowly add water and knead until a dough forms
- Cover and refrigerate dough for 30 minutes
- In a skillet, sauté onions, carrots, potato, and peas until softened. Season with thyme, salt, and pepper
- On a floured surface, roll out dough and cut into circles
- Place a spoonful of vegetable mixture onto each circle and fold over to seal, crimping the edges
- Place pasties on a baking sheet lined with parchment paper
- Bake for 25-30 minutes, or until golden brown and crispy
