Vegetable pasties are a classic comfort food that can be enjoyed hot or cold. Filled with a medley of colorful vegetables and wrapped in a flaky pastry crust, these pasties are perfect for a hearty lunch or dinner.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup butter, cold and cubed
  • 1/2 cup water
  • 1 onion, diced
  • 2 carrots, diced
  • 1 potato, peeled and diced
  • 1 cup peas
  • 1 tsp thyme
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F
  2. In a large bowl, mix flour and butter until crumbly. Slowly add water and knead until a dough forms
  3. Cover and refrigerate dough for 30 minutes
  4. In a skillet, sauté onions, carrots, potato, and peas until softened. Season with thyme, salt, and pepper
  5. On a floured surface, roll out dough and cut into circles
  6. Place a spoonful of vegetable mixture onto each circle and fold over to seal, crimping the edges
  7. Place pasties on a baking sheet lined with parchment paper
  8. Bake for 25-30 minutes, or until golden brown and crispy
  9. Serve hot or cold and enjoy!
