This Chicken Soup au Pistou is a hearty and flavorful dish that combines tender chicken, hearty vegetables, and a vibrant pistou sauce. Perfect for a cozy evening in or when you're feeling under the weather.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 6 cups chicken broth
  • 1 lb. chicken breast, diced
  • 1 can diced tomatoes
  • 1 can white beans, drained and rinsed
  • 2 cups spinach, chopped
  • Salt and pepper to taste
  • For the Pistou: 1 cup fresh basil leaves, 2 cloves of garlic, 1/4 cup grated Parmesan cheese, 1/4 cup olive oil

Directions

  1. In a large soup pot, heat olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  2. Add chicken broth, chicken breast, diced tomatoes, and white beans to the pot. Bring to a simmer and let cook for 20 minutes.
  3. In a food processor, combine basil leaves, garlic, Parmesan cheese, and olive oil. Blend until smooth to make the pistou sauce.
  4. Stir spinach into the soup and let wilt for a few minutes. Season with salt and pepper to taste.
