  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegan cheese, shredded
  • 1/4 cup vegan sour cream
  • 2 green onions, sliced
  • Fresh cilantro, chopped (for garnish)

Directions

  1. Preheat your oven to 450°F (230°C).
  2. Scrub the potatoes clean and cut them into fries.
  3. In a large bowl, toss the potato fries with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until well coated.
  4. Arrange the fries in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 30-35 minutes, flipping once halfway through, until the fries are golden brown and crispy.
  6. While the fries are baking, prepare the vegan chili. In a large saucepan, heat some olive oil over medium heat.
  7. Add the diced onion and minced garlic to the saucepan and sauté until softened and fragrant.
  8. Stir in the chili powder, cumin, smoked paprika, and salt. Cook for another minute to toast the spices.
  9. Add the diced tomatoes (with juices) and kidney beans to the saucepan. Stir well to combine.
  10. Simmer the chili for 15-20 minutes, stirring occasionally, until it thickens slightly.
  11. To make the vegan cheese sauce, melt the vegan cheese in a small saucepan over low heat.
  12. Once melted, stir in the vegan sour cream until smooth and creamy.
  13. To assemble the chili cheese fries, place a generous helping of the baked fries onto a serving tray.
  14. Pour the vegan chili over the fries, then drizzle the vegan cheese sauce on top.
