  • 2 cups semolina flour
  • 1 cup all-purpose flour
  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup rose water
  • 1/4 cup orange blossom water
  • 1 tsp active dry yeast
  • 1/4 tsp salt
  • 1 lb pitted dates, chopped
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Directions

  1. In a large mixing bowl, combine the semolina flour, all-purpose flour, powdered sugar, yeast, salt, and butter. Mix well until a crumbly dough forms.
  2. Gradually add the rose water and orange blossom water to the dough, kneading it until smooth and pliable.
  3. Cover the dough and let it rest for 30 minutes.
  4. In a separate bowl, mix the chopped dates with cinnamon and nutmeg until well combined.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Take a small portion of dough and flatten it in your palm. Place a spoonful of the date mixture in the center and seal the dough around it, shaping it into a small ball or crescent.
