Ingredients

  • Pie Crust:
  • - 1 1/2 cups all-purpose flour
  • - 1/2 cup unsalted butter, cold and cubed
  • - 1/4 cup granulated sugar
  • - 1/4 teaspoon salt
  • - 1 egg yolk
  • - 2 tablespoons ice water
  • Grain Filling:
  • - 1/2 cup cooked rice
  • - 1/2 cup cooked farro
  • - 1/2 cup cooked barley
  • - 1/2 cup cooked quinoa
  • - 1 cup ricotta cheese
  • - 1/2 cup granulated sugar
  • - 3 eggs
  • - 1 teaspoon vanilla extract
  • - Zest of 1 lemon
  • - 1/4 teaspoon cinnamon
  • - 1/4 teaspoon nutmeg
  • - 1/4 cup chopped candied orange peel
  • - Powdered sugar for dusting

Directions

  1. To make the pie crust, combine the flour, sugar, and salt in a large mixing bowl. Add the cold cubed butter and using your fingers or a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg yolk and ice water. Add this mixture to the flour mixture and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. In a large mixing bowl, combine the cooked rice, farro, barley, and quinoa. Add the ricotta cheese, granulated sugar, eggs, vanilla extract, lemon zest, cinnamon, nutmeg, and chopped candied orange peel. Mix until well combined.
  5. Roll out the chilled pie crust on a lightly floured surface to fit a 9-inch pie dish. Press the crust into the dish and trim any excess dough.
  6. Pour the grain filling into the pie crust and spread it evenly.
  7. Bake the pie in the preheated oven for 45-50 minutes, or until the filling is set and the crust is golden brown.
  8. Remove the pie from the oven and let it cool completely.
  9. Once cooled, dust the top of the pie with powdered sugar.
  10. Serve the Easter Grain Pie at room temperature and enjoy!
