Ingredients

  • 2 pounds beef (preferably chuck roast)
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Preheat the oven to 325°F (163°C).
  2. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
  3. Season the beef with salt and pepper. Sear the beef on all sides until browned, approximately 4-5 minutes per side.
  4. Remove the beef from the pot and set aside.
  5. In the same pot, add the sliced onion and minced garlic. Cook until the onion becomes soft and translucent.
  6. Sprinkle the flour over the onion and garlic mixture. Stir well to coat the onions.
  7. Add the tomato paste, paprika, dried thyme, and dried oregano. Stir until well combined.
  8. Pour in the beef broth and red wine, and stir to deglaze the pot, scraping up any browned bits from the bottom.
  9. Return the seared beef to the pot. Add the bay leaf.
  10. Cover the pot and place it in the preheated oven. Bake for approximately 3 hours, or until the beef is tender and easily falls apart with a fork.
  11. Remove the pot from the oven and let it rest for a few minutes.
  12. Using two forks, shred the beef into smaller pieces.
  13. Serve the Russian Baked Beef hot, garnished with fresh parsley. It pairs well with mashed potatoes, rice, or crusty bread.
