  • 1 1/2 cups yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground fennel seeds
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey
  • 1 large egg
  • 1 cup fresh corn kernels
  • 1/2 cup grated cheddar cheese
  • 1/4 cup finely chopped fresh fennel fronds


  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, black pepper, and fennel seeds.
  3. In a separate bowl, whisk together the buttermilk, melted butter, honey, and egg.
