Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) red enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet, brown the ground beef over medium heat. Add onion and garlic and cook until softened.

  4. Spread a little of the beef mixture on each tortilla and roll up. Place seam-side down in a baking dish.

  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
