Ingredients

  • 3-4 lbs beef chuck roast
  • 2 onions, sliced
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 2 cups beef broth

  • 2 tbsp Worcestershire sauce
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat oven to 300°F.
  2. Season the beef chuck roast with salt and pepper.
  3. Heat vegetable oil in a large Dutch oven over medium-high heat.
  4. Brown the roast on all sides, about 4-5 minutes per side.
  5. Remove the roast from the Dutch oven and set aside.
  6. Add onions and carrots to the Dutch oven and cook until softened, about 5 minutes.
  7. Stir in garlic, thyme, and rosemary, and cook for another minute.
  8. Add beef broth, red wine, and Worcestershire sauce to the Dutch oven.
