Serve it as a main course for a satisfying meal or as a side dish for a seafood feast.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound calamari rings
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the shrimp and calamari rings and cook for 2-3 minutes until they turn opaque and are cooked through. Drain and set aside to cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, Kalamata olives, red onion, parsley, and mint leaves.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.
  4. Add the cooked shrimp and calamari to the vegetable mixture and pour the dressing over the salad. Gently toss to combine all the ingredients.
  5. Refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
  6. Serve the Mediterranean Seafood Salad chilled, garnished with extra mint leaves and a drizzle of olive oil, if desired.
