Ingredients
- 1 package of firm tofu
- 2 tablespoons of olive oil
- 1/4 cup of vegan mayonnaise
- 1/4 cup of dairy-free yogurt
- 1 tablespoon of dried dill
- 1 tablespoon of dried parsley
- 1 tablespoon of dried chives
- 1 clove of garlic, minced
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Directions
- Start by draining and pressing the tofu to remove excess moisture. Place the tofu between two paper towels or kitchen towels and place a heavy object on top. Let it press for 15-20 minutes.
- In the meantime, prepare the creamy ranch dressing. In a bowl, mix together the vegan mayonnaise, dairy-free yogurt, dried dill, dried parsley, dried chives, minced garlic, lemon juice, salt, and pepper. Stir until well combined. Set aside.
- Once the tofu has been pressed, cut it into small cubes or desired shapes.
- Heat the olive oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook for about 5-7 minutes, or until golden brown on all sides.
- Remove the tofu from the skillet and place it on a paper towel to absorb any excess oil.
- Transfer the crispy tofu to a serving dish and drizzle the creamy ranch dressing over the top. Alternatively, you can serve the dressing on the side.
- Garnish with fresh herbs, such as parsley or chives, and serve hot. Enjoy!
