Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
  3. Stir in the taco seasoning and enchilada sauce. Simmer for 5 minutes, stirring occasionally.
  4. Remove the skillet from the heat. Stir in half of the Monterey Jack cheese and half of the cheddar cheese until melted and well combined.
  5. Warm up the flour tortillas in the microwave for a few seconds to make them easier to roll.
  6. Divide the beef mixture evenly among the tortillas, spreading it down the center of each one. Roll up the tortillas tightly and place them seam side down in a greased baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas, spreading it evenly.
  8. Sprinkle the remaining cheese over the enchiladas.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let the enchiladas cool for a few minutes. Serve hot with optional toppings like sour cream, guacamole, salsa, and chopped cilantro.
