Ingredients

  • 8 oz soba noodles
  • 1 block of firm tofu, pressed and cubed
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 2 green onions, chopped
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp ginger, minced
  • 1 clove garlic, minced
  • 1 tbsp sesame seeds
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

Directions

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat vegetable oil over medium-high heat. Add cubed tofu and cook until golden brown on all sides.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, garlic, salt, and pepper.
  4. Add bell pepper, carrots, and cabbage to the skillet with the tofu. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Add cooked soba noodles to the skillet and pour the sauce over the noodles and vegetables. Toss everything together until well combined.
  6. Divide the soba noodle veggie bowl into serving bowls. Garnish with chopped green onions and sesame seeds.
