Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard

Directions

  1. Rinse the quinoa under cold water in a fine-mesh strainer until the water runs clear.
  2. In a medium saucepan, bring the water or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.
  3. Remove from heat and let the quinoa sit covered for 5 minutes. Fluff with a fork and transfer to a large mixing bowl to cool.
  4. Add the diced bell peppers, cucumber, red onion, parsley, mint, and feta cheese to the quinoa.
