Ingredients

  • 1 cup whole wheat flour

  • 2 tablespoons chia seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1 teaspoon active dry yeast
  • 1 1/4 cups warm water
  • 2 tablespoons olive oil

Directions

  1. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, oats, cornmeal, flaxseeds, sunflower seeds, pumpkin seeds, chia seeds, sesame seeds, honey, and salt.
  2. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until it becomes frothy.
  3. Add the yeast mixture and olive oil to the dry ingredients. Stir well to form a sticky dough.
  4. Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise in a warm place for 1 hour or until it doubles in size.
  6. Once the dough has risen, punch it down to release the air. Shape it into a loaf and place it in a greased loaf pan.
  7. Cover the pan with the kitchen towel and let the dough rise for another 30 minutes.
  8. Preheat the oven to 375°F (190°C).
