Ingredients
- 1 lb fresh salmon fillets, skinless
- 1/2 cup breadcrumbs
- 2 tablespoons mayonnaise
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1/4 cup sour cream
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon zest
- 1 tablespoon capers, drained and minced
Directions
- Preheat your oven to 375°F (190°C).
- Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper. Bake for 15-20 minutes or until the salmon is cooked through and easily flakes.
- Remove the salmon from the oven and let it cool for a few minutes. Once cooled, flake the salmon into a large mixing bowl.
- To the bowl, add the breadcrumbs, mayonnaise, green onions, minced garlic, lemon juice, Dijon mustard, salt, and black pepper. Mix well to combine.
- Shape the salmon mixture into patties, about 1/2 inch thick. Place the patties on a plate and refrigerate for 15 minutes to firm up.
- Heat the vegetable oil in a large skillet over medium heat. Add the salmon patties and cook for 3-4 minutes per side, or until golden brown and crispy.
- While the patties are cooking, prepare the dill sauce by combining the sour cream, chopped dill, lemon zest, and minced capers in a small bowl. Stir well to combine.
- Serve the salmon patties hot with the creamy dill sauce on the side. Enjoy!
