Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 teaspoon salt
  • 2 cups shredded cheddar cheese

  • 1 pound ground sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes, drained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Directions

  1. In a large saucepan, bring water to a boil. Add salt and slowly whisk in the grits. Reduce heat to low and simmer for 20 minutes or until thickened, stirring occasionally.
  2. Preheat the oven to 350°F (175°C).
  3. In a skillet, cook the ground sausage over medium heat until browned. Remove the sausage from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the onion, garlic, and bell peppers. Sauté until the vegetables are tender.
  5. Stir in the cooked sausage, diced tomatoes, dried thyme, dried oregano, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to blend.
  6. Grease a baking dish with butter or cooking spray. Spread half of the cooked grits evenly over the bottom of the dish. Sprinkle half of the shredded cheese on top.
  7. Pour the sausage and vegetable mixture over the cheese layer. Spread the remaining grits on top of the sausage mixture.
  8. Sprinkle the remaining cheese on top of the casserole.
  9. Bake in the preheated oven for 25-30 minutes or until the cheese is golden and bubbly.
