Ingredients

  • 1 cup of bran flakes
  • 1 cup of buttermilk
  • 1/2 cup of brown sugar
  • 1/4 cup of vegetable oil
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of strong brewed coffee
  • 1/2 cup of chopped walnuts (optional)

Directions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the bran flakes and buttermilk. Let it sit for about 5 minutes to soften the bran flakes.
  3. Add the brown sugar, vegetable oil, egg, and vanilla extract to the bowl. Mix well until combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour in the brewed coffee and stir until evenly distributed throughout the batter.

  8. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
