Ingredients

  • 2 pounds bison stew meat, cut into 1-inch cubes

  • 1 pound potatoes, peeled and diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the bison stew meat to the pot and cook until browned on all sides. Remove the meat from the pot and set aside.
  3. In the same pot, add the onion and garlic. Sauté until the onion is softened and translucent.
